Easy. Many ways to do this.

It has a text delimited log file. Import this into any database you like at
any time you chose. Very easy.

There are many web page available to display this info for you. The clients
for windows are fairly limited though. WFHC, Cypheus, and Pyla. All seem to
be slightly less than idea IMHO. Cypheus has some excellent features though.
Pyla is a new client. It can be found in the archives of this mailing list.

This feature would be reasonably easy to implement for anyone familar with
hylafax and is in the Cypheus client. The logs stored by hylafax are
excellent. You can see the exact time that the opposing party's fax machine
ok the receipt of each page. Quite usefull when they deny receiving the fax.
