There is a field common in e-mails that begins, "From: ", and may say something like, "From: Lee Howard <faxguy@xxxxxxxxxxxxxxxx>". If this is the "field" for which you are looking, then you can *set* it by setting "FROMADDR" in FaxDispatch (see 'man faxrcvd'). This is only available since 4.2.0.

When HylaFAX sends a fax it populates the TSI signal with the information in "LocalIdentifier". If, however, "LocalIdentifier" is empty, then "FAXNumber" is used instead. "$SENDER" in FaxDispatch/faxrcvd refers to whatever the sender sent as its TSI signal. That signal is the *only* reliable source of identification that the sender communicates via fax protocol. If you are looking for more, then you will need to look to get it from Caller*ID.

If you configure Caller*ID properly, and if you have Caller*ID "name" serviced, then you will get $CIDNAME and $CIDNUMBER available to you. The caller's name may appear in the $CIDNAME value.
