What kind of phone-line do you have? analog/digital? which standard?
With digital lines (like ISDN/DSS1-Protocol) you can get the number dialed.
With analog lines this is a bit difficult. Then you can just decide by 
calling number, station-id of remote fax, used device/modem.

Is there just one phone number you have for all incoming faxes?
