I have got DID. Can I pick up the called number in order to route faxes in
this way.

Alternatively, I was thinking about the possibility of trying to discover
the intended recipients name from the incoming fax via OCR !!! I take it
that's not been done by anyone else yet.

I'm working on this right now.  First question you must answer:

What will the routing decision be based on?  Sender Phone Number (caller
ID?)  Called number ID (if you have DID?)  MSN (If you have euroISDN?) 
OCR and trying to scan the front page for recipient name?  Sounds cool,
but I'd love to see it.
