Something of an FAQ, if not in the FAQ.  Hylafax supports devices that
look like fax modems connected to serial ports.  This is true of,
say, the AVM B1, but not of the AVM Fritz.

It does not support G4 fax directly over ISDN, but you will have 
problems finding anyone to send to, anyway.

It does not, and is unlikely ever to, contain the DSP code to allow 
digital access to the speech path on an ISDN card and currently
can only control the modem function through Class 1, Class 2 and
Class 2.0 protocols.

No.  I have never heard of any modems that can detect subscriber
pulse metering, or even answer supervision.  There are multiple
ways of coding SPM, although I think most countries that used to
use this sort of metering no longer do so, but bill by time (in the
UK down to 0.1 seconds), possibly with a setup or minimum call charge.
Some SPM schemes may disrupt modem operation, although the obsolete UK
50Hz common mode scheme might be reasonably safe.

You will have to postprocess the logs, using the same sort of heuristics
to detect start of charging as does most call logging software for PABXes.

Most phone lines don't receive answer supervision or don't receive it
as a supported service.
