Check the RPM HOWTO at www.rpm.org.

Something like:

rpm -U hylafax-4.0-3.src.rpm
<youreditor> /usr/src/redhat/spec/hylafax-4.0-3.spec
edit the AFM line
rpm -ba /usr/src/redhat/spec/hylafax-4.0-3.spec
rpm -U /usr/src/redhat/RPMS/i386/hylafax-4.0-3.i386.rpm

should do it..
