Note that /var/log/messages is a file, not a directory. It contains
error reports from most server processes on your machine, but those
processes usually maintain their own error logs as well. 

With regard to Hylafax, it writes to /var/log/messages whenever it
notices a ring, when it receives each page, and if there is a failure.
It also reports the initialization of the modem after a call.

It depends on system configuration.  RedHat sticks them in 
/var/log/messages.
