Look in bin/faxrcvd script for a line with:

[...]
    ) | 2>&1 $SENDMAIL -ffax -oi $TOADDR
[...]

the -f tells your MTA which "From" to use in the mail.
but be sure that the user fax (who sends this mail) is
a trusted user to your MTA and allowed to change the "From" of the mail.

If you want to change the domain-part of the sender, you have to set the 
hostname of your system correctly.
