You should edit the commandline used by KDEPrintFax. You find the option 
under: settings->configure kdeprintfax->System->command.

As you can see KDEPrintFax is simply a wrapper around the command-line tool 
"sendfax", so you can modify hylafax options by editing these options (of 
course you should have hylafax, or at least the sendfax command, on your 
client too). Mine is something like this:

/usr/bin/sendfax -m -n -D -h %server %res -d %number %time_a -x %enterprise -c 
%comment -f andrea@mydomain %files

You insert your own server (in the "Fax server" field, or if you have an older 
version of KDEPrintFax, directly in the command line after the -h option) and 
you're done.
Remember that some versions of KDEPrintFax before 3.1.2, due to a bug, do not 
keep the changes to these preferences: upgrade to a newer KDE or edit this 
file in your home directory

.kde/share/config/kdeprintfaxrc

by hand.
