So there is no way of just making it learn every time?
Looks like the best option would be to 'lock' settings to whatever the
lowest spec machine will do but it would be nice if it could be dynamic and
forced to re-learn every time.
Perhaps a hack way of doing it would be to remove modify permissions to an
empty info file (for that number) so that it can not be updated by the
server? I dunno, clutching at straws a little.
I would have thought that this would have been addressed in the past since
it is fairly common practise.

You could do a new things.
For one, you could use DestControls to force certain parameters to any
particular destination.
For another, you could "lock" the info setting with an "&". See 'man
info'.
