Have you tried it from the command line?

To: to-test
From: from-test
Subject: subject-test
data1
data2

cat file |faxmail -f Helvetica > file.ps
I can use Courier, Courier-Bold, Helvetica, Helvetica-Bold and I get the
correct font in the output.
I don't use faxmail right now so I cannot do a complete test.
Try putting -f before -d.
