Fax protocol uses TIFF-F.  That's something you pretty much have to live 
with.

If you're talking about the format you receive in the notification e-mail, 
well then you change FILETYPE in etc/FaxDispatch (see 'man faxrcvd').  
However, the default for FILETYPE is Postscript, not TIFF.
