Well, that's basically because gs renders correctly your document. And
G3 FAX have roughly 200dpi, so the rasterization of graytones (colors
are converted to graytones) might leave you with text that is unreadable.
For example, with a 10pt font, and a blue color (1 0.5 0 0 CMYK) I'm getting
text that is readable, but only barely so.

I personally don't know if one can help this process with some Ghostscript
settings, or not.

One way to do, perhaps a bit work intensive, would be to render the
ghostscript with three times the resolution needed. (about 600dpi)
That gives you 9 points per real FAX point. Now take these 9 points, and
if n (n would be rather low, 1-3) points are black, than the corrosponding
real fax pixel gets black too.
